- In a pan heat oil add cumin seeds and Fenugreek seeds and onion saute for until turn brown.add green chilli, garam masala and potatoes add water.Close the pan with lid and cook for 10-15mins.
- After 10-15mins add Fenugreek leaves and cook (don't cover the pan) for 5-6mins until water dry.
- Garnish with coriander leaves and coconut. Serve with chapatis or rice.

For preparing fenugreek chappathi with potato bajji, in a bowl mix in wheat powder, salt, ghee, chaat masala, coriander leaves, fenugreek leaves and warm water. I love cooking with potatoes because it takes only minimum time to make. Fenugreek has a 'spicy' taste most similar to the effect of cumin - it makes the food spicier without adding a particular taste of its Sauté potatoes without adding any more liquid til a nice crust forms around them. Now start adding the shredded greens, a little at a time.
