  10. Make dimples in the bread by sticking your thumb in the flattened dough.
  11. Leave to prove again, covered, for about 20 mins.
  12. Sprinkle water over the dough, and press down olive pieces.
  13. Bake in a 200 degree oven for about 20 minutes until golden and done.
  14. Remove and brush immediately with olive oil.
  15. Dive in!
