- Pour in the milk. I used 1/2 cup whole milk.
- While still boiling at high heat, let this rise and fall 3 times. I don’t know why they did this specifically for 3 times - I guess to froth up the milk? Anyone know why?? Idk. I just kept the tradition.
- Here’s a trick I use: once it reaches the top of the pot, blow on it and it will fall to the bottom. Alternatively, you can turn down the heat, then turn back up.
- Strain
- Enjoy with a spoon full of sugar :)
The second is a bit more complex and may require a trip to a specialty foods store or a health food store that carries a nice variety of whole spices. Indian tea, also known as chai, is rich and milky, deeply coloured, steaming hot, and boldly flavourful with a definite need for sugar to offset the toasty bitterness. The word chai just means tea. If you ask for chai tea in India, you're asking for tea tea and your dorky adorableness will get laughed at a little bit.
