Stir together in a medium bowl the picante sauce, vinegar, ginger root, pineapple juice and cornstarch. Add the pork and stir-fry until browned and no longer pink. If pork roast comes in netting or is tied, do not remove. Heat the cooking oil in a wok or a large, deep skillet over medium-high heat.
