Instructions to make Zucchini Thogaiyal / Zucchini Chutney:
  1. Clean and chop the zucchini into small pieces
  2. Heat a small pan. Add oil. Once the oil is hot enough, add urad dal and red chilli
  3. Saute till the dal turns light brown
  4. Transfer the roasted dal+red chilli into a mixie jar
  5. To the same oil in kadai, add zucchini pieces and saute for 2-3 minutes till they turn soft
  6. Add the tamarind and saute for a minute
  7. Transfer this zucchini+tamarind mixture to the same mixie jar
  8. Let it cool completely
  9. Add asafoetida and salt
  10. Grind this mixture to a coarse paste without adding any water
  11. Serve this chutney with rice, idli or dosa
