Heat butter and oil in a large pot or Dutch oven over medium-low heat. - Melt the butter and add the carrots and onions until onions are soft, then add garlic until fragrant
- Add the tomatoes, chicken stock,2 tbsp dried basil, 2 bay leaves and a few pinches of salt and sugar, cover and simmer for about 30 minutes on low.
- Pull off the heat and let cool for a bit. Use a stick blender until smooth and then taste for seasoning, put the pot on medium heat and add salt to taste, finish with a touch of cream or to taste.
In a large saucepan, bring first five ingredients to a boil. Add the chicken stock, tomatoes, tomato paste and sugar and bring to a boil.
