- Make ready 1 large Cauliflower
- Prepare 300 ml Milk
- Prepare 250 grams Mature Chedder cheese

- Otional - pre-heat oven to 200 C (400 F).
- Cut the cauliflower into small florets & wash.
- Boil in salted water for 10 minutes until just tender.
- Drain and place in a buttered oven-proof baking dish.
- Put the milk, flour and butter in a saucepan.
- Apply modrate heat and whisk continually until the sauce thickens, boils and is smooth.
- Add three-quarters of the grated cheese, mustard, nutmeg and seasoning to the saucepan.
- Allow to simmer for a further 2 minutes, stirring well.
- Pour the sauce over the cauliflower.
- Mix the remaining cheese, and (optional) breadcrumbs, and sprinkle over the top.
- Finish under a hot grill (broiler) until golden brown (or place in the pre-heated oven for about 15 to 25 minutes) until golden brown and bubbling.
- Serve immediately as a starter or alongside your favourite dish. We enjoy it with both chicken and fish dishes.
