  5. Add beaten eggs to cooled fruit mixture. Stir gently.
  6. Add dry flour mixture and stir.
  7. Place mixture in a prepared 20cm round cake tin. Sprinkle with sugar for a crunchy top (optional).
  8. Bake 180C for approx 1.5 hours. Skewer test the middle after 1 hour 15 minutes to check if the cake is cooked or needs a little longer. Cool slightly then turn out onto a wire rack to cool fully.
